GNOCCHI ALLA VODKA

Serves 2 or 1 very hungry person.


Ingredients:

1 Small Onion

2 Cloves Of Garlic

1 Shallot

3 Strips Of Bacon

1 Tbsp Tomato Paste

1 Shot Vodka

50ml Chicken Stock or 50ml Pasta Water

50ml Cooking Cream

2 Handfuls of Gnocchi

Method:

1. Dice onions, shallots and garlic.

2. Cut bacon strips to 1 inch pieces.

3. Fry the bacon in a pan on medium heat, till the fat renders and bacon turns brown (7-9 mins).

4. Add in the onions and stir-fry till translucent. 

5. Add in the garlic and shallots and stir-fry till fragrant (About 2 min).

6. Add in 1 Tbsp of tomato paste and fry for 2 min, or until a deep red colour is achieved.

7. Add in 1 shot of vodka, using a rubber spatula, scrape the bottom on the pan, getting as much brown bits as possible.

8. Add in 50ml of chicken stock and bring to a simmer.

9. Add in 50ml of cream and bring to a simmer.

10. Season with salt and pepper to taste.

11. Set the sauce aside once done.

12. Boil a pot of water seasoned with salt and a touch of olive oil

13. Once the water reaches a rolling boil, add in the gnocchi and boil till they float up to the top.

14. Strain the gnocchi and add them into the sauce and mix throughly.

15. Garnish with basil or parsley and enjoy!
